SHORTBREAD IN SEVEN EASY STEPS

We really love shortbread at Cafe. It’s a proper Scottish biscuit. Crumbly but moist, sweet but creamy. We bake some everyday to serve with puddings like parfaits and brûlées, or wee ones to serve with coffee. We thought you might like to try our recipe at home. It’s so simple.

STEP ONE

Gather your ingredients: 300g plain flour, 80g corn flour, 250g unsalted butter, 125g caster sugar.

STEP TWO

Whisk the butter and sugar together until creamed.

STEP THREE

Sift in the flour and corn flour.

STEP FOUR

Combine and form into a dough.

STEP FIVE

Roll into a sausage shape.

STEP SIX

Cut into discs and bake on a non-stick mat at 135C for 45 minutes, or until just starting to colour.

STEP SEVEN

Remove from oven and sprinkle with a little sugar while cooling.
